Honeycomb
These crunchy, golden little nuggets of honeycomb are a treat no matter how old you are. It is super easy to make and can be used in many different ways. Dipped in chocolate, sprinkled over ice-cream, crushed and added to cheesecake mix, as a topping on cupcakes or just enjoy it as it comes. Yum.

- 100g caster sugar
- 4 tbsp golden syrup
- 1½ teaspoons bicarbonate of soda

These crunchy, golden little nuggets of honeycomb are a treat no matter how old you are. It is super easy to make and can be used in many different ways. Dipped in chocolate, sprinkled over ice-cream, crushed and added to cheesecake mix, as a topping on cupcakes or just enjoy it as it comes. Yum.
Method
- First place the sugar and syrup into a medium saucepan, mix well. Pick a pan that appears slightly too large as when you add the bicarbonate of soda everything will bubble up and expand.
- Place the pan on a medium heat and let everything cook down, do not stir the mixture until it’s nearly melted. You need to get to the stage where everything is bubbling away like a hot spring and the mix has turned deep golden in colour (approx. 4 – 5 minutes).
- Take the pan off the heat and whisk in the bicarbonate of soda with a wooden spoon. I love this bit! Your mixture will puff up into a pale-gold billowing cloud.
- Quickly turn this mix out onto a piece of baking parchment or greased tin foil.
- Leave to set (approx. 40 mins) and then bash it up with a rolling pin so you have large splinters and small chunks to use as you wish.
